Bouquet: Bright and lifted with classic Brambly black fruits and currants. Lifted Cedar notes come thru from the finest French oak

Palate: A rich yet elegant in styled Cabernet showing beautiful sweet black currants and dark plums alongside savoury elements of thyme and some underlying earthy undertones. These flavours are enveloped by silky long fine tannins giving length to a classical Margaret River wine that will age gracefully.

Review “Houghton clone from the Wilyabrup vineyard, 21 days on skins, basket pressed to tank, mlf then pressed to barrel, matured for 18 months in French oak (55% new). An interesting mix of Szechuan peppercorn and raspberry on the nose, the characters testament to both the growing area and the time in oak. In the mouth the wine is silken and pliable, with a swipe of graphite tannins through the cool mineral finish. Very smart.” 94/100 Erin Larkin    Haliday Wine Companion Published 28 June 2022

Vinification: Pristine Cabernet Sauvignon fruit was picked in the cool of the morning. It was then placed in open fermenters and macerated on skins for 24 days. The cap was lovingly hand plunged four times a day in the early stages of the ferment, to extract colour and tannin. The free run juice was drained and the fermented grapes were basket pressed to tank. The wine under-went a malolactic fermentation which softens the acid. The wine was then racked to French barriques, (50% new and 50% one and two year old) and matured for 16 months. Blended and bottled in December 2020.

2019 Vintage Rating 8/10: The 2019 vintage started about 2 weeks later than the previous few years and had been cool, very different to the rest of the country.  Yields have been lower.  Lovely white wines have had time to develop delicate flavours while retaining natural acidity. A bit of mid-vintage rain refreshed the reds, then the fruit hung out there allowing for a long, slow ripening period.  There was no Marri flowers so netting of all varieties was necessary. The grapes were picked on 6 and 12th April.
